Guacamole is one of very few things I know how to make without reading directly from a recipe. On this particular day I used white onion, in lieu of red, because that's all I had.
The recipe is simple:
2 ripe avocados, 1 handful of cilantro, 1 jalapeno, 1/4 medium red onion, 2 tbsp lime juice, large pinch of cumin, large pinch of chili powder, large pinch of salt
Combine all in a food processor or use some old fashion elbow grease and smash in a bowl with a fork. If you're doing it by hand, the cilantro, jalapeno and onion should be pretty finely chopped before you get started. If you want a more rustic guacamole don't process or smash for too long!
